Wash and dry the fruit
Remove peels, stems, pits, and seeds
Slice the fruit into small, even pieces
Arrange the fruit in a single layer on freeze-dryer trays
Pre-freeze the fruit if recommended by the machine manufacturer
Load the trays into the freeze dryer
Set the machine to the fruit cycle or recommended settings
Run the freeze-drying process until complete
Check that the fruit is fully dry and brittle
Allow the fruit to cool before packaging
Store the freeze-dried fruit in airtight containers or vacuum-sealed bags
Add oxygen absorbers if desired
Keep the stored fruit in a cool, dark, dry place
