Locate an unemployed villager
Place a lectern near the villager
Wait for the villager to claim the lectern
Check that the villager becomes a librarian
If needed, break and replace the lectern until the desired trades appear
Trade with the librarian to lock in the profession
Avoid trading if you want to keep rerolling the trades
Keep the lectern nearby if you want to maintain the job site block
