Protect the turtle eggs until they hatch
Kill baby turtles after they grow into adults to get scutes
Collect 5 scutes to craft a turtle shell
Use a crafting table to place the scutes in a helmet shape
Alternatively, use commands in Creative mode to get a turtle shell
