Pat the chicken thighs dry with paper towels
Season the chicken thighs with salt, pepper, and desired spices or marinade
Oil the grill grates lightly
Place the chicken thighs on the grill skin-side down if using skin-on thighs
Grill for 5 to 7 minutes per side
Move to indirect heat if flare-ups occur
Continue grilling until the internal temperature reaches 165°F
Remove the chicken thighs from the grill
Let the chicken rest for 5 minutes before serving
