Gather ingredients: ground beef (or turkey), onion, garlic, bell pepper (optional), kidney beans (canned, drained), crushed tomatoes (or tomato sauce), tomato paste (optional), chili powder, cumin, smoked paprika (optional), oregano (optional), cayenne (optional), salt, black pepper, beef broth or water
Chop onion and bell pepper; mince garlic
Heat a large pot over medium-high heat
Add a little oil (optional) and cook ground beef until browned; drain excess fat if needed
Add onion and bell pepper; cook 3–5 minutes until softened
Add garlic; cook 30–60 seconds
Stir in chili powder, cumin, smoked paprika, oregano, cayenne (if using); cook 30–60 seconds
Add tomato paste (optional) and cook 1 minute (optional)
Add crushed tomatoes and broth/water; stir to combine
Add drained kidney beans
Simmer 20–45 minutes, stirring occasionally
Taste and adjust salt, pepper, and spices
Serve hot, optionally topped with cheese, sour cream, cilantro, or sliced green onions
