Gather ingredients: cooked sushi rice (or short-grain rice), rice vinegar, sugar, salt, nori sheets, sesame oil (optional), sesame seeds (optional), soy sauce (for serving)

Cook rice: cook short-grain rice and let it cool slightly

Season rice: mix rice vinegar, sugar, and salt; fold into warm rice until glossy

Shape: press small portions of seasoned rice into flat, puck-shaped rounds (about 2–3 inches / 5–8 cm)

Prepare nori: cut nori into small pieces sized to wrap each rice puck

Assemble: lightly oil the rice (optional), place nori on top or wrap with nori to cover one side

Optional toppings: sprinkle sesame seeds if desired
