Preheat the gas grill to medium heat, about 375°F to 400°F
Clean and oil the grill grates
Pat the chicken wings dry with paper towels
Season the wings with salt, pepper, and any desired dry rub
Lightly oil the wings to help prevent sticking
Place the wings on the grill over indirect heat
Close the lid and cook for 20 to 25 minutes
Turn the wings every 5 to 7 minutes
Move wings to direct heat during the last 5 to 10 minutes to crisp the skin
Grill until the internal temperature reaches 165°F
Remove the wings from the grill and let them rest for 5 minutes
Toss with sauce if desired before serving
