Preheat the grill to medium-high heat
Wash the eggplant and trim off the ends
Slice the eggplant into 1/2-inch rounds or lengthwise planks
Brush both sides with olive oil
Season with salt and pepper
Place the eggplant directly on the grill grates
Grill for 3 to 5 minutes per side
Flip when grill marks appear and the eggplant softens
Remove from the grill when tender and browned
Serve immediately or use in other dishes
