Pat the fish dry with paper towels
Brush the fish lightly with oil
Season with salt, pepper, and desired spices or herbs
Preheat the grill to medium-high heat
Clean and oil the grill grates
Place the fish skin-side down if it has skin
Grill over direct heat for a few minutes per side
Avoid moving the fish too early
Flip carefully with a wide spatula or grill basket
Cook until the fish flakes easily with a fork
Remove from the grill immediately when done
Serve with lemon or desired sauce
