Choose a thick, well-marbled steak
Bring the steak to room temperature for 30 to 45 minutes
Pat the steak completely dry
Season generously with salt and black pepper
Preheat the grill to high heat
Clean and oil the grill grates
Place the steak on the hottest part of the grill
Sear the first side without moving it
Flip once and sear the other side
Move the steak to a cooler part of the grill if needed
Cook to your preferred doneness
Use a meat thermometer for accuracy
Remove the steak a few degrees before target temperature
Let the steak rest for 5 to 10 minutes
Slice against the grain
Serve immediately
