Preheat the gas grill on high for 10 to 15 minutes
Clean and oil the grates
Pat the steak dry with paper towels
Season both sides with salt and pepper
Let the steak sit at room temperature for 20 to 30 minutes
Place the steak on the hottest part of the grill
Sear for 2 to 4 minutes per side
Move the steak to a cooler part of the grill if needed
Close the lid while cooking
Grill until the desired internal temperature is reached
Use a meat thermometer to check doneness
Remove the steak from the grill
Rest the steak for 5 to 10 minutes
Slice against the grain and serve
