Pat steaks dry with paper towels
Season both sides with salt and pepper
Let steaks sit at room temperature for 20 to 30 minutes
Heat a heavy skillet over high heat until very hot
Add a small amount of high smoke point oil
Place steaks in the skillet without crowding
Cook without moving for 2 to 4 minutes
Flip and cook the other side for 2 to 4 minutes
Sear the edges with tongs if needed
Reduce heat if the pan starts smoking too much
Add butter, garlic, and herbs near the end if desired
Spoon melted butter over the steaks while cooking
Check doneness with a meat thermometer
Remove steaks from the pan when they reach desired temperature
Rest steaks on a plate for 5 to 10 minutes
Slice against the grain and serve
