Open the Gmail app
Tap your profile picture in the top right
Tap Manage accounts on this device
Select the Google account you want to remove
Tap Remove account
Confirm the removal
If you want to sign out from all Google apps on the phone
Open Settings on your phone
Tap Passwords & accounts or Accounts
Tap Google
Select the account
Tap Remove account
Confirm the removal
