Open the Gmail app or go to Gmail in a browser
Tap or click your profile picture in the top right
Select Manage your Google Account or Manage accounts on this device
Choose the account you want to remove
Tap or click Remove account or Sign out
Confirm the action if prompted
On a browser, you can also sign out by clicking your profile picture and selecting Sign out
If you want to log out from all devices, change your Google Account password
