Open the Settings app
Tap Mail
Tap Accounts
Select the email account you want to log out of
Tap Delete Account
Confirm by tapping Delete from My iPhone
Repeat for any other accounts you want to remove
If you only want to stop Mail sync, turn off the Mail toggle instead of deleting the account
