Wash and chop apples
Place apple pieces in a clean glass jar
Add sugar or honey
Add filtered water to cover the apples
Stir until the sugar or honey dissolves
Cover the jar with a cloth and secure it with a rubber band
Let it sit in a warm, dark place for 1 to 2 weeks
Stir once a day
Strain out the apple pieces
Return the liquid to the jar
Cover the jar again with a cloth
Let it ferment for 3 to 6 weeks
Taste occasionally until it becomes tangy and acidic
Transfer to a clean bottle
Store in a cool, dark place
