1 egg yolk

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1 to 2 garlic cloves, minced or grated

1/2 teaspoon salt

1/2 cup olive oil

1/4 cup neutral oil

In a bowl, whisk the egg yolk, lemon juice, Dijon mustard, garlic, and salt

Slowly drizzle in the olive oil and neutral oil while whisking constantly

Continue whisking until thick and creamy

Taste and adjust salt or lemon juice as needed
