Gather ingredients: 2 cups granulated sugar, 1/4 cup lemon zest, 1/2 cup fresh lemon juice, 1/2 cup water, 1/4 cup light corn syrup, 1/8 tsp salt
Line a baking sheet with parchment paper
In a bowl, rub lemon zest into the sugar until fragrant
In a saucepan, combine water, corn syrup, lemon juice, and salt
Heat over medium-high until the mixture reaches 300°F (hard-crack stage)
Remove from heat and let stand 1 minute
Pour or spoon syrup onto the parchment in small puddles
Let cool until fully set
Break into pieces and roll each piece in the lemon sugar
Store in an airtight container at room temperature
