Preheat the oven to 350°F
Bake or boil 2 to 3 medium sweet potatoes until tender
Peel the sweet potatoes and mash until smooth
In a large bowl, mix the mashed sweet potatoes with 1/2 cup melted butter
Add 1 cup sugar
Add 2 large eggs
Add 1 cup evaporated milk
Add 1 teaspoon vanilla extract
Add 1 teaspoon ground cinnamon
Add 1/2 teaspoon ground nutmeg
Add 1/4 teaspoon salt
Mix until smooth and well combined
Place a pie crust in a 9-inch pie dish
Pour the sweet potato filling into the crust
Smooth the top with a spatula
Bake for 50 to 60 minutes, until the center is set
Let the pie cool completely before slicing
Serve plain or with whipped cream
