Gather chicken or pork, soy sauce, vinegar, garlic, bay leaves, black peppercorns, water, and oil
Cut the meat into serving pieces
Mince or crush the garlic
Combine meat, soy sauce, garlic, bay leaves, and peppercorns in a bowl
Marinate for at least 30 minutes
Heat oil in a pot over medium heat
Sauté the garlic until fragrant
Add the marinated meat and cook until lightly browned
Pour in the marinade and add water
Bring to a boil
Lower the heat and simmer until the meat is tender
Add vinegar and do not stir for a few minutes
Stir and continue simmering until the sauce reduces
Adjust with more soy sauce, vinegar, or water as needed
Serve hot with rice
