How To Make Barbacoa?

3 to 4 pounds beef chuck roast or beef cheek

2 tablespoons oil

1 onion, chopped

4 cloves garlic, minced

2 chipotle peppers in adobo

2 tablespoons adobo sauce

1/4 cup lime juice

1/4 cup apple cider vinegar

1 cup beef broth

2 teaspoons ground cumin

2 teaspoons dried oregano

1 teaspoon ground cloves

2 bay leaves

1 1/2 teaspoons salt

1 teaspoon black pepper

Sear the beef in oil on all sides

Blend onion, garlic, chipotle peppers, adobo sauce, lime juice, vinegar, broth, cumin, oregano, cloves, salt, and pepper

Place the beef in a slow cooker or Dutch oven

Pour the sauce over the beef

Add bay leaves

Cook covered on low for 8 to 10 hours in a slow cooker or at 325°F for 3 to 4 hours in a Dutch oven

Remove the beef and shred it

Discard bay leaves

Return shredded beef to the cooking liquid

Serve with tortillas, onions, cilantro, and salsa
