Remove the membrane from the back of the ribs
Pat the ribs dry with paper towels
Season both sides with salt, pepper, and barbecue rub
Let the ribs rest for 30 minutes to 1 hour
Preheat the grill or smoker to low heat, about 225°F to 250°F
Set up for indirect cooking
Place the ribs bone-side down on the grill or smoker
Cook the ribs slowly for 3 to 5 hours
Maintain a steady low temperature
Baste or spritz the ribs occasionally if desired
Wrap the ribs in foil with a little liquid if you want softer ribs
Continue cooking until the meat is tender and pulls back from the bones
Brush barbecue sauce on the ribs during the last 15 to 30 minutes
Cook until the sauce sets
Remove the ribs from the heat
Let the ribs rest for 10 to 15 minutes
Slice between the bones and serve
