Choose a brisket with good marbling
Trim excess fat, leaving about 1/4 inch fat cap
Season generously with salt, black pepper, and optional garlic powder or paprika
Let the brisket sit at room temperature for 30 to 60 minutes
Preheat the oven to 275°F or prepare a smoker at 225°F to 250°F
Place the brisket fat side up on a rack or in a smoker
Cook until the internal temperature reaches about 165°F
Wrap the brisket tightly in butcher paper or foil
Continue cooking until the internal temperature reaches 200°F to 205°F and the meat is tender
Remove the brisket from heat
Rest the brisket for at least 1 hour before slicing
Slice against the grain
Serve with your preferred sides or sauce
