How to Make Borscht?

Heat oil or butter in a large pot

Add chopped onion and cook until soft

Add minced garlic and cook briefly

Add diced carrots and celery

Add chopped beets and cook for a few minutes

Add shredded cabbage and diced potatoes

Pour in broth or water

Add tomato paste or chopped tomatoes

Season with salt, pepper, and bay leaf

Bring to a boil

Reduce heat and simmer until vegetables are tender

Add vinegar or lemon juice

Adjust seasoning to taste

Stir in chopped dill or parsley

Serve hot with sour cream if desired
