Heat 1 to 2 tablespoons of oil in a large pot over medium heat
Add 1 chopped onion and cook until softened
Add 2 to 3 minced garlic cloves and cook for 30 seconds
Stir in 1 teaspoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon paprika, and salt to taste
Add 1 pound of cooked shredded chicken
Pour in 6 cups of chicken broth
Add 1 can diced tomatoes
Add 1 can black beans, drained and rinsed
Add 1 cup corn
Add 1 chopped jalapeño if desired
Bring to a boil, then reduce heat and simmer for 15 to 20 minutes
Stir in 1 to 2 tablespoons lime juice
Taste and adjust seasoning
Serve hot with tortilla strips
Top with avocado, shredded cheese, sour cream, cilantro, or diced onion if desired
