Collect chicken bones from cooked chicken
Remove any large pieces of meat if desired
Place the bones in a large pot
Add cold water to cover the bones
Add optional aromatics such as onion, carrot, celery, garlic, and herbs
Add a small amount of salt if desired
Bring the pot to a boil
Reduce the heat to a low simmer
Skim off any foam or impurities from the surface
Simmer for several hours
Add more water if needed to keep the bones covered
Strain the broth through a fine mesh strainer
Discard the bones and solids
Cool the broth quickly
Refrigerate or freeze the broth for storage
