Peel fresh garlic cloves
Rinse the cloves if needed
Pat the cloves dry
Crush or chop the garlic cloves
Add a small amount of salt
Mash the garlic into a smooth paste using a mortar and pestle, knife, or blender
Add a little oil or water if needed to help blend
Scrape the paste into a clean container
Store in an airtight container in the refrigerator
