Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper
Cut 1 large head of cauliflower into bite-sized florets
In a bowl, whisk together 1 cup flour, 1 cup milk, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper
Dip each cauliflower floret into the batter and let excess drip off
Arrange the coated florets on the prepared baking sheet
Bake for 20 minutes, flipping halfway through
In a separate bowl, mix 1/2 cup hot sauce with 2 tablespoons melted butter
Remove the cauliflower from the oven and toss or brush with the buffalo sauce
Return to the oven and bake for 10 to 15 more minutes until crisp and browned
Serve with ranch or blue cheese dressing if desired
