Cook 1 cup rice (or quinoa) and season to taste
Sauté 1 diced onion and 2 minced garlic cloves in 1–2 tbsp oil
Add 1 lb (450 g) ground beef, chicken, or turkey; cook until browned
Stir in 1–2 tbsp taco seasoning (or chili powder, cumin, paprika, salt, pepper)
Add 1/2 cup water or salsa; simmer 5–10 minutes
Warm black beans or pinto beans (1 can, drained and rinsed)
Prepare fajita-style veggies: sauté sliced bell peppers and onions until tender-crisp
Make a simple salsa (or use store-bought): dice tomatoes, onion, cilantro; add lime juice and salt
Slice or mash avocado (or prepare guacamole)
Shred lettuce or chop romaine
Grate cheese (optional)
Mix a quick crema: plain Greek yogurt or sour cream + lime juice + salt (optional)
Assemble bowls: rice base, then meat, beans, veggies, lettuce, salsa, avocado, cheese, crema
Serve immediately
