Rinse 1 cup of rice
Season 2 chicken breasts or thighs with salt and pepper
Heat 1 tablespoon of oil in a pan over medium heat
Sear the chicken until browned on both sides
Remove the chicken and set aside
Add 1 chopped onion and 2 minced garlic cloves to the pan
Cook until softened
Add the rice and stir for 1 minute
Pour in 2 cups of chicken broth
Return the chicken to the pan
Bring to a boil
Reduce heat to low and cover
Simmer until the rice is tender and the chicken is cooked through
Let rest for 5 minutes
Fluff the rice and serve
