Pat the chuck steak dry
Season both sides with salt and pepper
Heat a skillet or grill over medium-high heat
Add a small amount of oil to the pan if using a skillet
Sear the steak for 3 to 5 minutes per side
Reduce heat to medium and continue cooking to desired doneness
Use a meat thermometer if needed
Rest the steak for 5 to 10 minutes before slicing
Slice against the grain
Serve immediately
