How To Make Cilantro Lime Rice?

1 cup long-grain white rice (or jasmine rice)

1 3/4 cups water or chicken/vegetable broth

1/2 teaspoon salt

2 tablespoons lime juice

1 tablespoon lime zest

1/4 cup chopped fresh cilantro

2 tablespoons butter or olive oil (optional)

Rinse rice under cold water until water runs mostly clear

Combine rice, water/broth, and salt in a saucepan

Bring to a boil over medium-high heat

Reduce heat to low, cover, and simmer 15–18 minutes (until liquid is absorbed)

Turn off heat and let rice steam, covered, 5 minutes

Fluff rice with a fork

Stir in butter or olive oil (if using)

Stir in lime juice and lime zest

Fold in cilantro

Taste and adjust salt and lime juice as needed

Serve warm
