Rinse 1 cup of rice until the water runs mostly clear
Add the rice to a pot with 8 to 10 cups of water or broth
Bring to a boil over medium-high heat
Reduce to a low simmer
Stir occasionally to prevent sticking
Cook for 45 to 90 minutes until the rice breaks down and the mixture becomes creamy
Add more water as needed to reach your desired consistency
Season with salt to taste
Serve hot with toppings such as scallions, ginger, soy sauce, sesame oil, shredded chicken, or fried shallots
