Heat 2 tablespoons sugar in a ladle or small pan over low heat
Stir continuously until the sugar melts and turns golden brown
Remove from heat
Add a small pinch of baking soda
Mix quickly until the mixture becomes light and foamy
Pour onto parchment paper or a silicone mat
Flatten gently with a spatula or press with a greased flat object
Press a cookie cutter or shape into the candy if desired
Let it cool completely before handling
