How to Make Esquites?

4 cups corn kernels

2 tablespoons butter

2 tablespoons mayonnaise

2 tablespoons Mexican crema or sour cream

1/4 cup crumbled cotija cheese

1 tablespoon lime juice

1/2 teaspoon chili powder

1/4 teaspoon salt

2 tablespoons chopped cilantro

Heat the butter in a skillet over medium heat

Add the corn and cook until lightly charred and tender

Stir in the salt and lime juice

Remove from heat

Mix in the mayonnaise and crema

Top with cotija cheese, chili powder, and cilantro

Serve warm
