Knead briefly until smooth
Divide the dough into equal balls
Flatten each ball into a thick disc
Heat a skillet or griddle over medium heat
Cook the gorditas on both sides until lightly browned and cooked through
Remove from the heat and let cool slightly
Slice each gordita open to form a pocket
Fill with beans, cheese, meat, or other desired fillings
Serve warm
