Peel or scrub potatoes
Grate potatoes
Rinse grated potatoes in cold water
Drain well
Squeeze out excess moisture with a clean towel
Season with salt and pepper
Heat oil or butter in a skillet over medium-high heat
Add potatoes in a thin layer
Press down lightly with a spatula
Cook until golden brown on one side
Flip and cook until golden brown on the other side
Serve hot
