How To Make Jerky?

Choose lean meat such as beef, turkey, or venison

Trim all visible fat

Partially freeze the meat for easier slicing

Slice meat into thin strips against or with the grain as desired

Mix a marinade with salt, soy sauce, spices, and optional sugar

Add meat to the marinade and refrigerate for several hours or overnight

Remove meat from marinade and pat dry

Arrange strips in a single layer on dehydrator trays or oven racks

Dry in a dehydrator at 145°F to 160°F until leathery and dry

Or dry in an oven at the lowest setting with the door slightly open

Check for doneness by bending a piece; it should crack but not break cleanly

Cool completely before storing

Store in an airtight container or vacuum-sealed bag in the refrigerator or freezer
