How To Make Kaju Barfi?

Soak 1 cup cashews in warm water for 15 to 20 minutes

Drain completely and pat dry

Grind the cashews to a fine powder

Heat 1 cup sugar with 1/2 cup water in a pan

Cook until the syrup reaches one-string consistency

Add the cashew powder to the syrup

Stir continuously on low heat until the mixture thickens

Add 1 to 2 tablespoons ghee

Mix until the mixture leaves the sides of the pan

Add a few drops of cardamom essence or 1/4 teaspoon cardamom powder

Transfer the mixture to a greased plate or tray

Flatten evenly with a spatula or rolling pin

Let it cool slightly

Cut into diamond or square shapes

Allow it to set completely before serving
