How To Make Kanji Rice?

Rinse 1 cup of rice until the water runs mostly clear

Drain the rice well

Add the rice to a pot with 1.1 to 1.2 cups of water

Let the rice soak for 20 to 30 minutes

Cover the pot with a lid

Bring the water to a boil over medium heat

Reduce the heat to low as soon as it boils

Cook for 12 to 15 minutes without removing the lid

Turn off the heat

Let the rice steam for 10 minutes with the lid on

Fluff the rice gently with a rice paddle or fork

Serve warm
