How To Make Lasagna Soup?

Heat 1 to 2 tablespoons olive oil in a large pot over medium heat

Add 1 pound ground beef or Italian sausage and cook until browned

Add 1 chopped onion and cook until softened

Add 3 to 4 minced garlic cloves and cook for 30 seconds

Stir in 2 tablespoons tomato paste

Add 1 can crushed tomatoes

Add 4 to 6 cups chicken or beef broth

Add 1 to 2 teaspoons Italian seasoning

Add salt and black pepper to taste

Bring to a boil, then reduce to a simmer

Break 8 to 10 lasagna noodles into pieces and add to the pot

Cook until the noodles are tender

Stir in 1 to 2 cups spinach if desired

Mix ricotta cheese with grated Parmesan and a little salt

Ladle the soup into bowls

Top with the ricotta mixture and shredded mozzarella

Garnish with extra Parmesan and basil if desired
