How To Make Latkes?

2 pounds russet potatoes

1 medium onion

2 large eggs

1/4 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

Oil for frying

Peel the potatoes and onion

Grate the potatoes and onion

Place the grated mixture in a clean towel and squeeze out as much liquid as possible

Transfer the mixture to a bowl

Add the eggs, flour, salt, and pepper

Mix until combined

Heat about 1/4 inch of oil in a skillet over medium-high heat

Scoop about 2 tablespoons of mixture per latke into the hot oil

Flatten slightly with a spatula

Fry until golden brown on one side

Flip and fry until golden brown on the other side

Transfer to a paper towel-lined plate

Repeat with the remaining mixture

Serve hot with applesauce or sour cream
