How To Make Lollipops?

Combine sugar, corn syrup, and water in a saucepan

Heat over medium heat, stirring until the sugar dissolves

Stop stirring and bring the mixture to hard-crack stage, about 300°F to 310°F

Remove from heat

Stir in flavoring and food coloring, if desired

Let the syrup cool slightly until thickened

Pour into lollipop molds or onto a silicone mat in small circles

Insert lollipop sticks

Allow to harden completely

Remove from molds or mat

Wrap individually in candy wrappers or cellophane
