How to Make Marinara Sauce with Fresh Tomatoes?

Wash 2 to 3 pounds fresh tomatoes

Score an X on the bottom of each tomato

Blanch tomatoes in boiling water for 30 to 60 seconds

Transfer tomatoes to ice water

Peel off the skins

Remove cores and seeds if desired

Chop the tomatoes

Heat 2 to 3 tablespoons olive oil in a saucepan over medium heat

Add 3 to 4 minced garlic cloves

Cook garlic until fragrant, about 30 seconds

Add the chopped tomatoes

Add salt and black pepper

Add 1 teaspoon sugar if needed

Add 1 teaspoon dried oregano

Add 1 teaspoon dried basil or a few fresh basil leaves

Simmer uncovered for 25 to 40 minutes

Stir occasionally and mash tomatoes as they soften

Adjust seasoning to taste

Stir in fresh basil at the end if using

Serve over pasta or use as desired
