Gather beef tripe, beef shank or pork, hominy, onion, garlic, dried oregano, bay leaves, chili powder or dried chiles, salt, pepper, and water or broth
Clean the tripe thoroughly and cut it into bite-size pieces
Cut the meat into pieces if needed
In a large pot, combine the meat, tripe, onion, garlic, bay leaves, salt, pepper, and water or broth
Bring to a boil, then reduce to a simmer
Skim off any foam that rises to the surface
Cover and simmer until the meat and tripe are tender
Add the hominy to the pot
Add oregano and chili powder or blended dried chiles
Simmer until the flavors combine and the hominy is heated through
Taste and adjust salt and pepper
Serve hot with lime, chopped onion, cilantro, and tortillas if desired
