Rinse and sort dried pinto beans or black beans
Soak beans overnight in water, or use a quick-soak method
Drain and rinse the beans
Place beans in a pot with fresh water or broth
Add onion, garlic, bay leaf, salt, and optional cumin
Bring to a boil
Reduce heat and simmer until beans are tender
Stir occasionally and add more water if needed
Mash some beans for a thicker texture if desired
Cook bacon, ham, or chorizo separately if using
Stir in cooked meat, jalapeño, cilantro, or tomato if desired
Adjust salt and seasoning
Serve hot as a side dish or use in tacos, burritos, or rice bowls
