How To Make Mexican Street Corn?
4 ears corn, husked
2 tablespoons mayonnaise
2 tablespoons sour cream
1/2 cup cotija cheese, crumbled
1 tablespoon lime juice
1/2 teaspoon chili powder
1 tablespoon butter, melted
1 clove garlic, minced
1 tablespoon chopped cilantro
Salt, to taste
Heat a grill or skillet over medium-high heat
Brush corn with melted butter
Cook corn, turning occasionally, until charred and tender
Mix mayonnaise, sour cream, lime juice, garlic, and salt
Spread the mixture over the hot corn
Sprinkle with cotija cheese
Dust with chili powder
Top with chopped cilantro
Serve with lime wedges if desired
