Choose bone-in pork chops, about 1 to 1.5 inches thick
Pat the chops dry
Salt both sides generously
Let them rest in the refrigerator for at least 30 minutes, or up to overnight
Bring the chops to room temperature for 20 to 30 minutes before cooking
Season with pepper and any desired spices
Preheat a skillet or grill over medium-high heat
Add a little oil to the pan
Sear the chops for 2 to 3 minutes per side
Lower the heat and continue cooking until the internal temperature reaches 145°F
Avoid overcooking
Remove the chops from the heat and let them rest for 5 to 10 minutes
Add butter, garlic, or herbs during the last minute of cooking if desired
Use a meat thermometer for accuracy
Consider brining the chops before cooking for extra moisture
Serve immediately after resting
