How To Make Mushroom Soup?

2 tbsp butter

1 tbsp olive oil

1 onion, finely chopped

2 cloves garlic, minced

500 g mushrooms, sliced

2 tbsp all-purpose flour

4 cups vegetable or chicken broth

1 cup milk or cream

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried thyme

1 tbsp chopped parsley

Heat butter and olive oil in a pot over medium heat

Add onion and cook until soft

Add garlic and cook briefly

Add mushrooms and cook until browned and tender

Stir in flour and cook for 1 minute

Slowly pour in broth while stirring

Add salt, black pepper, and thyme

Bring to a boil, then reduce heat and simmer for 15 to 20 minutes

Stir in milk or cream

Cook for 2 to 3 more minutes

Add parsley

Serve hot
