How To Make Cream Of Mushroom Soup?

2 tablespoons butter

1 small onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced

2 tablespoons all-purpose flour

2 cups vegetable broth or chicken broth

1 cup milk or half-and-half

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon dried thyme

1 tablespoon heavy cream, optional

1 tablespoon chopped parsley, optional

Melt butter in a pot over medium heat

Add onion and cook until soft

Add garlic and cook for 30 seconds

Add mushrooms and cook until browned and softened

Stir in flour and cook for 1 minute

Slowly add broth while stirring

Bring to a simmer and cook until slightly thickened

Stir in milk, salt, pepper, and thyme

Simmer gently for 5 to 10 minutes

Stir in heavy cream if using

Garnish with parsley if desired
